of cholesterol. Sitosterols are white, waxy powders with a characteristic odor. They

are hydrophobic and soluble in alcohols.”

Chlorogenic acid is “an important intermediate in lignin biosynthesis. This compound, known as an antioxidant, may also slow the release of glucose into the bloodstream after a meal.”


FUN FACT: Chlorogenic acid is an ester of caffeic acid and quinic acid. Chlorogenic acid is the major polyphenolic compound in coffee, isolated from the leaves and fruits of dicotyledonous plants. This compound, long known as an antioxidant, also slows the release of glucose into the bloodstream after a meal.

Kaempferol is a natural flavonol, a type of flavonoid, found in a variety of plants

and plant-derived foods, according to wikipedia.
